WHere is a simplified take on a drink from our latest cocktail list. It's a large-volume pre-mixed which is loaded full of essence of a festive period, rendering it ideal for a festive gathering. Save the extra citrus syrup for morning drinks, desserts, or for another batch of this cocktail.
The Bikini Cocktail
Makes enough for 10 people
For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (makes 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Put every components in a pot, heat until it reaches a gentle boil, stirring until the sugar dissolves. Then, remove from the heat allowing it to cool down fully. Decant into a clean bottle, cap it keeping it in the refrigerator, where it will keep for about one month.
To make Premix: Combine all the spirits and syrup in a large bottle, leave to sit for one hour, then pass it through preferably using a fine cloth, to ensure it's perfectly clear.
For serving: Pour 85ml of your batch mix to a mixing glass containing ice, and agitate gently for one minute until cold. Filter to a cold coupe glass or a similar vessel, garnish with some cranberries and finish with a quick spritz of mandarin oil over the drink.
